Homesteading 101

Would you love to save time and money in building your urban/suburban homestead? Whether you have a small urban lot, or something more expansive and want to grow more food, medicine and fiber, this workshop is for you. Some topics covered will include: overall design for efficiency, food-fuel-medicine production, orchard management, integrating poultry and rabbits, and aquaculture. John will be sure to have the best references for you to get started on your journey.

Permaculture 101

What is permaculture? How can we use permaculture principles to design our homes. gardens, landscapes and communities? In this 3 class series you will learn about the philosophy and application of permaculture, especially as it applies to the Northeast Ohio region. The instructors have decades of experience here in NEO and can advise on appropriate techniques and local resources to help you get started or continue your permaculture practice.

The Perennial Garden and Orchard

Homemade Fertility

Learn how to build fertility on your land naturally. In this class we will discuss combining techniques for maximizing soil fertility: cover crops, composting, plant diversity, foliar sprays, animal integration and finally a list of natural products you can use to support long term sustainable soil health. We will make compost and you will go home with the info you need to make your own high quality compost. Class participants should also plan to take cover crop seeds home as we will be working with seeds and how we create mixes throughout the year. We’ll also observe plants for nutritional deficiencies and drought stress and talk about the best natural solutions.

This class is designed to support the backyard gardeners in producing biologically rich soils close to home. Not everything in our gardens is perfect but we know how to fix it and we want to teach you!

Tree Pruning

John Wright from Red Beet Row helps us tackle the basics of seasonal pruning and maintenance of common fruits and nuts. This will include a holistic view of the tree and will enable us to map out a plan for deciding on branch removal and desired tree shape that would make for the best outcome. Together we will practice basic techniques on the proper way to make cuts and  manage trees and shrubs of different heights and growth patterns. We’ll go over the proper tools needed and their maintenance as well as sanitary practices in the orchard.

 

Food Preservation I - Canning fruit and vegetables

Hot water bath canning

Do you want to create your own jams ans sauces that can be stored in the cabinet without the need for freezing or refrigeration? This skill used to be common but has been lost to many. In this workshop we will process tomatoes or fruit into sauce or jam and learn to preserve it safely in sealed jars using the hot water bath process. Come with your questions or even ingredients to make your own!

Pressure Canning

Do you want to know how to preserve low acid items like soups and meats that are not appropriate for hot water bath canning? Using a pressure canner can be intimidating, but once you understand how to use it safely a whole new world of preservation is open to you.

Food Preservation II - Fermenting fruit and vegetables

Making Fermented Hot Sauce

In this workshop participants will assemble their own lacto-fermented hot sauce using hot peppers, onions, garlic and other optional fruits, veggies, herbs and/or spices. Lacto-fermentation uses a saltwater brine to create a probiotic rich and tangy final product. Participants will take home a jar of hot sauce ingredients ready ferment, and are encouraged to bring some of their own ingredients to personalize their hot sauce.

Fermenting with honey

In this workshop we will learn how to ferment with honey to create 3 different products: short mead (low alcohol and quick), carbonated soda using fruit, herbs of flowers, and honey fermented fruit or garlic (very medicinal). Each participant will have the opportunity to make and take their own fermented fruit/garlic.

There’s lots to see and learn about on our farm: Our food forest has a host of native and non-native food producing and support plants growing on swales for water management, learn how we manage chickens for eggs and meat, rabbits, sheep and pigs on about 4 acres, learn about natural building using, cob, straw-bale, and other techniques. and more!

Chicken Processing

Raising animals for meat is a big step in self sufficiency. We have been processing our own chickens, rabbits, sheep and hogs on the farm for over 10 years. In this hands on workshop participants can learn about and engage at their comfort level in each step from slaughter and plucking, to butchering and packaging.
